Quick & Easy Pizza

This may be a controversial statement.. but I’m not really a massive of fan of pizza.

I mean, I like it.. and when I’m eating I think it’s really tasty and filling, but I would rarely choose it if I was in a restaurant. As someone who has had digestive issues in the past, very bready meals can give me a bit of a pain in my stomach so I try my best to avoid them.

…..But then I went to Rome.

Roman pizzas are the nicest. freakin’. pizzas. in. the. world.

Wow! They just taste so good. I went to Italy thinking I’d have pizza one of the nights, when in reality I had at least one a day!

Roman style pizzas are thin base (my favourite) and most restuarants tended to do toppings that I adore – olives, buffalo mozzarella, rocket, spinach, mushrooms…etc. etc. Plus they were a good cheap option in the more expensive areas, and after walking for a couple of hours they provided me with a good amount of fuel to keep going for a few more.

I haven’t had a pizza since I got back to Ireland because I’m afraid I’ll just be disappointed, but today was the first properly warm sunny day and I felt like I was right back in that beautiful ancient city.

Rather than leaving my first pizza experience to chance I decided to make my own, using a wrap to help get that crispy base.

Pizza Wrap

This recipe is so simple and so easy, and if you keep wraps in the freezer like I do then you can whip one of these up any evening in less than 45 minutes.

Quick & Easy Pizza

  • Servings: 1

Ingredients:

  • 1 Wholewheat Wrap/Tortilla
  • Grated Mozzarella Cheese (as much as you like!)
  • Tomato Puree (1-2 tbsp)
  • Mixed Italian Herbs (1/2 tbsp)
  • Black Pepper

Suggested Toppings*:

  • Cooked Chicken
  • Yellow Pepper (diced)
  • Red Onion (chopped)
  • Spinach

Preheat your oven to 180 degrees, and grease a loaf tin with butter/coconut oil/spray oil.

Place a wrap on a baking tray. Spread enough tomato puree on the wrap  to cover the base (1-2 tbsp should do the trick). Next, season with the herbs and pepper. Sprinkle some of the cheese on to the tomato sauce.

Add your toppings! I listed the ones I used above but you can really choose whatever you want.. just remember the more your put on the pizza the harder it will be to successfully lift up each slice..  so don’t go mad! Then, top with mozzarella cheese and season with some pepper.

Pop the tray in the oven and cook for 20-25 minutes until the cheese is melted and the edge of the wrap is nice and crispy.
