Cinnamon Oat Pancakes

I’ve tried banana & egg pancakes.. protein pancakes.. oat and yoghurt pancakes… and nothing comes close to these. They are so easy, and so simple to make. 

After a few tweaks I finally have the proportions of the ingredients correct so that I’m not overdoing it on the oats and making them more decadent than they need to be. In fact, these are the very first thing I made with my newly purchased Nutribullet, and I even tweeted them to tell them 🙂

Cinnamon Oat Pancakes

  • Servings: 1
  • Difficulty: easy

Ingredients:

  • 30g of Gluten Free Oats
  • 100g of Low Fat Cottage Cheese
  • 1 egg
  • 1/2 – 1 tsp of Cinnamon (personal preference really)
  • Tiny drop of vanilla extract

Method:

Pop all the ingredients in a container and blend until smooth.*

Pre-heat a nonstick frying pan over a medium/high heat. Pour out the batter onto the pan. (one ladle full per pancake) Brown on both sides and serve hot.

Serving Suggestions: Greek Yoghurt / Melted Berries / Fried Banana / Fresh Fruit / Bacon & Maple Syrup

*These are great if you make the batter the night before, or leave it to rest for 30 minutes. It thickens the mixture up lovely!
