Homemade Chocolate Truffles

I ate so much chocolate over Christmas that I’m trying to ration myself to one or two small pieces every other night. We had some boxes of chocolates that people gave us as presents, but OOPS… I ate them all so, instead of buying a new one, I decided to try make my one truffles.

**Disclaimer** These are a LOT heavier than milk chocolate.. so really.. 1 or 2 is enough after dinner. Don’t do what I did, which was eat 5 in a row and then feel violently ill for 3 days. You have been warned.

Chocolate Truffles

  • Servings: 8 chocolates
  • Difficulty: easy

Ingredients:

  • 2oz of dark chocolate (75-85% cocoa content is gooood)
  • 4 tbsp Full Fat Coconut Milk
  • 1 tbsp Maple Syrup
  • Cocoa Powder

Method:
Melt the chocolate in a pot over a low-medium heat. Add in the coconut milk and maple syrup, and stir it in. Take it off the heat after a couple of seconds.. otherwise it can get a bit weird and gloopy. Continue to stir until its all mixed together.. use a fork if it gets lumpy.. or whisk it! (I have no whisk). Transfer the mixture to a container and pop in the fridge overnight.

Once it’s set, scoop out the mixture with a teaspoon and roll them around in your hand to form little balls. Sprinkle out for cocoa powder on a plate and roll the finished balls in the powder.
